Banana Peanut Butter Chocolate Cake

  • 25g butter, softened
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 3 very ripe medium bananas (about 200g each)
  • 1 tablespoon milk
  • 225g (11/2 cups) self-raising flour
  • 11/2 teaspoons ground cinnamon
  • ¼ teaspoon bicarbonate of soda
  • 1 tbsp of smooth peanut butter
  • 60g cream cheese, softened
  • 30g butter, softened
  • 1/2 teaspoon vanilla essence
  • 3/4 cup icing sugar mixture
  • 1/4 cup of cocoa powder


  • For the cake ,I made 2 of these and placed on top of each other with a layer of the butter icing in between
  • Cream butter and sugar together ,then add I egg at a time ,then add rest of the ingredients ,until mixed
  • Add to a greased spring form tin ,put in sc on high with tea towel under the lid for 2hrs or check afterr 1 hr
  • Mix all ingredients until smooth
  • Put a layer on one cake and put the other on top ,smooth over the cream cheese frosting and refrigerate ,
