Banana and macadamia muffins
Ingredients
- Banana and macadamia muffins
- 3 cups of SR flour
- 1 1/4 cups of milk
- 1 egg, lightly beaten
- 90g butter
- 1/2 cup brown sugar
- 1 tspn cinnamon
- 2 small bananas (mashed)
- I cup macadamia nuts (roughly crushed or chopped)
Instructions
- Sift flour into large bowl. Add brown sugar, cinnamon, and stir to combine. Combine egg milk and butter in jug add to flour mix, mix well then add banana and nuts.
- Fill paper muffin cups or muffin tray 3/4 full and cook in sc for hour and half on high with tea towel under lid.
