2 cups brown sugar
1 large onion chopped
1 kg pitted dates chopped
2 kg bananas chopped
1 litre of brown vinager
A generous tablespoon of fresh ginger chopped
1/2 cup of lemon juice
4 teaspoons of curry powder
1Place everything in a 6.5 litre sc
2Cook on high for three hours stirring occasionally.
3Then cook on low for three hours stirring occasionally.
4Cook with lid on the whole time. Bottle in sterilised jars while still hot.
6Makes about 6 medium sized jars.

I used 15 bananas for this chutney and followed the recipe. It made 10 jars. Next time I would reduce the amount of dates and halve the curry powder I think. It was easier to use scissors to cut the dates up. Tastes like curried bananas and was nicer the next day
