Balsamic Chicken & Veg
Slow cooker chicken & veg with a hit of balsamic flavour!
Ingredients
- Oil
- Minced garlic (1 tsp x 5-9)
- 4-8 carrots
- 4-8 chicken pieces
- Salt
- Pepper
- Coriander
- Rosemary
- 1/2 cup balsamic vinegar
- 1-2 onions
- 1-3 cups greens (broccoli, beans, etc.)
- Spinach
Instructions
- Pour a small amount of oil in the bottom of the slow cooker and add 1tsp garlic and cover bottom
- Peel and slice carrots length ways and line bottom of slow cooker
- Place chicken pieces (I used thigh fillets) on top of carrots
- Season chicken with salt, pepper, coriander and rosemary (to taste) and then cover each fillet with 1tsp garlic
- Pour 1/2 cup balsamic vinegar over the top
- Dice onion and sprinkle over top
- Cook on high for 4 hours or low for 8 hours
- With half an hour to go, take off lid, place desired greens on top, and continue cooking until finished
- Serve chicken on a bed of spinach and rest of veges on the side
Notes
- This recipe has a rather sharp balsamic taste (which I love!), but if you wanted to cut it down a bit, add a small amount of brown sugar or honey to help balance out the flavors. 🙂
