Balsamic Chicken & Veg

Slow cooker chicken & veg with a hit of balsamic flavour!

  • Prep: 10 mins
  • Cook: 4 hrs



Minced garlic (1 tsp x 5-9)

4-8 carrots

4-8 chicken pieces





1/2 cup balsamic vinegar

1-2 onions

1-3 cups greens (broccoli, beans, etc.)



1Pour a small amount of oil in the bottom of the slow cooker and add 1tsp garlic and cover bottom

2Peel and slice carrots length ways and line bottom of slow cooker

3Place chicken pieces (I used thigh fillets) on top of carrots

4Season chicken with salt, pepper, coriander and rosemary (to taste) and then cover each fillet with 1tsp garlic

5Pour 1/2 cup balsamic vinegar over the top

6Dice onion and sprinkle over top

7Cook on high for 4 hours or low for 8 hours

8With half an hour to go, take off lid, place desired greens on top, and continue cooking until finished

9Serve chicken on a bed of spinach and rest of veges on the side


1This recipe has a rather sharp balsamic taste (which I love!), but if you wanted to cut it down a bit, add a small amount of brown sugar or honey to help balance out the flavors. 🙂
