Baked Sweet Potato Eggs

Ingredients
 

  • 1 large sweet potato
  • 2 eggs
  • Cracked black pepper & salt to taste

Instructions
 

  • Cut sweet potatoes in half length ways
  • Place cut halves (cut side up) in slow cooker bowl
  • I cook them directly on the base of a non ceramic slow cooker. If using a ceramic bowl I would elevate them on a trivet over 1-2 cm of water.
  • Cook on high for approx 1hr 45mins or until tender
  • Take sweet potato carefully out of slow cooker and scoop out enough sweet potato flesh to allow room to crack an egg into each hollow
  • Place sweet potatoes back into slow cooker THEN crack an egg in each
  • Top with salt and pepper to taste
  • Replace lid and cook for further 20mins or until egg is done to your liking
  • This was great as lunch just by itself but you could also serve it with a side salad or grilled mushrooms

  1. I don’t understand the non ceramic bowl idea? I thought all slow cookers had a ceramic bowl? This does look yummy 🙂

  2. Yes could you expand on that?? Iv’e got 3 slow cookers and they all have a ceramic insert. Is there another type?? And yes very yummy…. think my Daughter would love this 🙂

    1. Hi Tanya
      Yes the newer ‘searing’ type slow cookers have a metallic cooking bowl in them instead of the ceramic style.
      (see the slow cooker review page on this website for examples)
      If I’m dry cooking something that stays dry like this or baking goods etc I used my metalic ones. If am using ceramic I like to have 1-2cm of water under whatever I’m cooking just so the ceramic isn’t heating up totally dry/uncovered.
      However I’ll happily dry cook in a cearmic slow cooker bowl still if it’s something that will makes it’s own liquids during cooking like a roast meat etc 🙂
