Bacon Wrapped Mini Meatloaf

Ingredients
 

  • 500g mince beef
  • 1 x 40gpacket of French onion soup
  • 1 egg
  • 1/2 brown onion, chopped
  • 1/2 cup bread crumbs
  • Sweet baby rays hickory sauce
  • Tasty cheese
  • Bacon

Instructions
 

  • Mix beef, soup, eggs, onion, bread crumbs and sauce together.
  • (If still a bit wet add some more bread crumbs)
  • Form into a ball
  • Layer bottom of slow cooker with bacon.
  • Wrap ball in bacon.
  • Drop ball into slow cooker, pat down a little.
  • Cover with more sauce and sprinkle with cheese.
  • Cook on low for 4 hours with tea towel under lid.
  • Once cooked place in air fryer or oven to crisp bacon.

Notes

  • I used the 1.5l slow cooker
  • Sauce amount is to your liking as little or as much as you want. You can use any sauce you like, Smokey, bbq, hot, mustard! The list is endless!

  1. I made this today. It was yum. But i don’t know what i did wrong but couldn’t slice it cause it just broke up. But the flavour was definitely there. I put it in the oven for 20 mins just to crisp up the bacon. I always fail with meatloaf for some reason ?.

  2. Perfect size for a small family, love that I have another recipe for my baby sc! Was a bit sweet using just BBQ sauce, will try again with some tomato paste, mustard and Worcestershire. Didn’t have French onion soup mix so used vegeta instead. Also added a small grated carrot.

  3. Was awesome! Bacon got a little burnt on the botttom but the flavour was great and meatloaf was moist.
    Best meatloaf I’ve ever had!

  4. A tremendous recipe! Used toothpicks to secure bacon in place. 3.5 hours in a large slow cooker. Sprayed base of slow cooker with spray oil – meatloaf came out quite well. Very tasty – whole family loved it.

  5. This is so yummy.
    I hadn’t made meatloaf in so long and had been looking for a 1.5lt slow cooker for so long sop when I finally found one, this was the first recipe I cooked. It was simple and very very tasty. I didn’t use a lot of BBQ sauce as I’m not a fan of BBQ sauce but it was still delicious.

  6. Just made this for dinner today and we just ate it! I made a slight change and used ‘bulls eye’ tango tomato bbq sauce instead of baby rays as I couldn’t find baby rays and I don’t overly love bbq sauce. I also doubled the ingredients as there was 8 of us eating tonight. The meatloaf was delicious! I cooked the double batch on high for 5 hours. It didn’t slice but crumbled more but hey that doesn’t matter to us we just like yummy food! I made it with the slow cooker potatoe bake and the kids absolutely loved both and raved about both! This is the 4th slow cooked meal I have made off this site and th kids have loved them all. My fussy 11 year old son asked ‘where are you finding all these yummy recipies’ ha! We will definitely eat these again! And they would especially be great in Winter!

  7. Just a suggestion for those whom said it crumbled when you tried to slice I would try resting it for 10 or so minutes after it cookes

  8. Amazing!! I’m in the UK and went to the Polish supermarket and got Knorr French onion soup packet mix. I didn’t add the extra onion or cheese and used minimal BBQ sauce .
    I used the teatowel trick , 4hrs on low , drained off the juices and then finished it off in the oven 180c for 20min .
    It was so so good, moist and tasty, even my toddler ate what she thought was a giant meatball hahah
