800gms of bacon rashes
750 gms of chicken mince
1 tbs of olive oil
1 brown onion finely chopped
2 garlic cloves
1/3 cup of pine nuts
1 1/2 cups fresh bread crumbs
3/4 of basil leaves ,finely shredded
1 egg lightly beaten
1/4 cup parsley finely chopped
1Heat oil in a fry pan
2Add onion , garlic and pine nuts
3Cook stirring for 8 minutes or until softened
4Allow to cool
5Combine all ingredients EXCEPT bacon in a bowl and mix well
6Mould into shape
7Add to a rectangle baking dish and press down
8Carefully fold over bacon lattice
9Add onto the rack in the slow cooker ,or scrunched up foil balls as this creates a lot of juice
10Cook on HIGH for 4 hours or LOW for 6 hours

Absolutely loved this!! Was so moist but didn’t fall apart. My son who is a very picky eater absolutely loves this and has asked for it to be made every other week now.
