Bacon and vegetable frittata

Ingredients
 

  • 6 eggs, beaten
  • Salt n lots pepper
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1 cup self raising flour
  • 1 cup cheese
  • 1 onion, diced
  • 2 carrots, grated
  • 150g bacon pieces
  • 1 cup frozen peas
  • 1 cup small pieces cauliflower and broccoli
  • 2 tomatoes, diced

Instructions
 

  • Line slow cooker with baking paper.
  • Mix everything together in a bowl, Place in cooker and flatten.
  • Cook on high with tea towel under lid for 4 hours

  1. Cooked this tonight, left out the peas, cauli and broccoli and added mushrooms and capsicum instead. Cooked on Low for 3 hours but it was a little dry so I will go back to 2 hours next time. Will add herbs next time for more flavour.

    I usually cook a fritatta or a crustless quiche in the oven. I used the above recipe (without garlic and onion powder) and it turned out beautifully, I will never cook in the oven again. Slow cooker so superior. I took out after 3 and1/ 2 hours on high in Breville Smart Temp. Savoury and tasty and nice caramelised edges ?.

    Made this yesterday. Followed recipe, except no onion because I didn’t have one. It was amazing and flavour was great.

    So easy. I switched the veggies around a bit and threw in whatever was in the fridge. Was a lovely warm meal to come home too and reheated well for breakfast the next morning.
