Asian style chicken noodle soup

Not your usual chicken noodle soup but oh so tasty. I came up with this one when I didn’t feel like going anywhere and used what I had in the cupboard.

Asian style chicken noodle soup

Not your usual chicken noodle soup but oh so tasty. I came up with this one when I didn’t feel like going anywhere and used what I had in the cupboard.

Ingredients
 

  • 1kg chicken thigh cutlets
  • 1 can of chicken and sweet corn soup ( optional)
  • 1 can diced tomatoes
  • 1 1/2 diced onion
  • 1 cup of frozen mixed veggies
  • 2 ltrs chicken stock ( but I’ve also used water and stock powder)
  • 2tbsps soy sauce
  • 1tsp garam masala
  • 1tbsp ground cumin
  • 1 1/2 tbsps ground coriander
  • 1 1/2 crushed garlic
  • 1tbsp Worcestershire sauce
  • Mixed herbs ( dried)
  • Whichever noodles you like. I use hokien noodles

Instructions
 

  • Add everything except the noodles into the slow cooker
  • Cook on high for 3 hours then low for 3 hours.
  • 1 hour before serving remove chicken and take out bones then add chicken back to slow cooker.
  • 1/2 hour before serving add noodles.

  1. So easy to throw together and absolutely yum on these cold nights! Great for leftovers in a Thermos the next day too. A keeper for sure!

  2. Wasn’t a100% sure about this when I first read the recipe but so glad I decided to give it a try.
    Great combination of flavours and so easy to throw together
    Definately going to be one of my go to soups from here on

    Absolutely delish. A bit like a minestrone but more levels of flavour. I held back a lt of stock as I couldn’t fit it in my cooker and found it didn’t need it anyway I also only added half amount of soy as my stock was quite salty to begin with.

  4. Great recipe. I used thigh fillets which I shredded half way through cooking. Otherwise stuck to the recipe and we really enjoyed the flavours.
