Abbacchio Alla Romana Lamb Shanks (Lamb Roman Style)

Ingredients
- 4 - 5 lamb shanks or 2kg lamb pieces
- 2 Cloves of garlic finely sliced
- 2 sprigs of Rosemary
- 4 anchovies
- 100ml white wine vinegar
- 250mls white wine
- Parsley
Instructions
- Brown lamb in pan.
- Place rosemary sprigs, chopped anchovies, white wine vinegar, salt and garlic in large bowl and mixed well.
- Add lamb pieces and coat well with mixture.
- Return to pan and cook for 10 minutes until vinegar evaporates and add wine .
- Transfer to slow cooker and cook on high for approx 5 hours.
- Add parsley near end.

This was delicious!! The salty/vinegary combination works well with the lamb. Will definitely be a regular on our family menu.
