Packed full of simple, sweet in season vegetables this soup is dairy free, gluten free, low FODMAP and vegan
Ingredients
- 800g Butternut pumpkin
- 650g Carrots
- 400g Parsnip
- 400g Swede
- 650g Sweet Potato
- 1L Vegetable stock
Instructions
- Chop all vegetables and place in slow cooker bowl with stock
- Cook for 8-9hrs (Contempo 5.5L sc) on LOW
- Blitz in food processor or with a stick mixer
- Season to taste with salt and pepper

Very delicious.
Short on parsnip and used turnip instead of Swede with Jap pumpkin.
Turned out nice and thick after being blended.
Enough serves for 7meals.
