I make a slight variation of this recipe - I use the same veggies, but add more of them and use less stock (3 cups) so it’s quite thick. I roast all the veggies. I cook on low for 3-4 hours. It’s perfect and delicious every time.
This was absolutely delicious! I can’t wait to make it again. I added sweet potato and didn’t add the peas until the end so they stayed really green in colour. I served it with rice and hot dinner rolls. My guests all loved it and went back for seconds. Super easy and extra delicious.
I love this! Not spicy (which is perfect for me). Delicious flavour and very creamy. Makes lots of sauce. Will be making this again!
