Zucchini quiche (slice)

Ingredients
 

  • 1 large onion, chopped
  • 2 tsp minced garlic
  • 4 medium zucchinis, grated
  • 8 slices bacon, cubed
  • 2 cups grated tasty cheese
  • 2 cups self raising flour
  • 8 eggs, beaten
  • 1/3 cup vegetable oil
  • 1/2 grated cheese, extra

Instructions
 

  • Line slow cooker with baking paper.
  • Place all ingredients (except for extra grated cheese) into a bowl and mix until well combined.
  • Pour mixture into slow cooker and then sprinkle the top with the extra cheese.
  • Put tea towel under lid and cook for 3 hours on high.
  • Once cooked,remove lid and turn off slow cooker and leave quiche to firm up, for about 20 mins.
  • Remove quiche and place under grill to brown up the top.

  1. Just love this one. Third time I’ve cooked it . This time I left out one zucchini and replaced it with some sweet potato and a little grated carrot along with a handful of fresh garlic chives. Too easy, even a bloke can do this.

  5. How large is this recipe? I have a 5.5 lt sunbeam secret chef but like a high quiche. Just wondering if I need to adjust the measurements?

    This is a staple in our summer menu. It’s a good way to use up those extra zucchinis that are lying in the bottom of the fridge.Love how versatile it is. We sometimes add left over veges as well. Easy to adapt to make it gluten free.
