Vegie Loaded Lasagna

Another great slow cooker lasagna - packed with vegetable goodness

Ingredients
 

  • 1kg mince
  • 1 onion (finely diced)
  • 1 carrot
  • 1 Zucchini
  • 2 mushrooms
  • 1/4 capsicum green
  • 1/4 capsicum red
  • 1/4 cup Broccoli
  • 1/4 cup Cauliflower
  • 1 generous tsp Minced garlic
  • 1/4 tsp Chilli powder
  • 1 440g tin of tomatoes
  • Any jar of Pasta sauce eg Dolmio
  • 1 Jar Dolmio Lasagna Cheese sauce
  • Lasagne sheets
  • 1 tbsp Tomato paste
  • Cheese grated approx 1 cup

Instructions
 

  • Grate all vegies and cheese.
  • Brown of mince and onion then add all ingredients mix through.
  • Layer slow cooker with mince, lasagna sheet and cheese sauce.
  • Top with grated cheese.
  • Cook on low for 4hrs

  1. This was delicious. It needed salt maybe cause I didn’t use chilli powder but it was such a hearty and satisfying lasagne that can feed a large family. I did brown up the cheese under the grill just for presentation but it’s the only lasagne I’ll be making now

    Love d loved loved this recipe. I did put the chili powder on and it didn’t make it too hot at all (was worried about the kids) and agree it could probably use some salt too. The only thing I changed was adding a towel under the lid about half way through to help it to brown up…it did nicely. Will definitely be making this again!

  3. First lasagna I have made and it was absolutely delicious!!! Agree that it lacked salt but just served with salt and pepper before eating. Can’t wait to get stuck into the left overs!!

  4. Love this recipe! Love that it has so many veggies. Have done it several times now. I omit the capsicum and use extra of all other veg. I also use passata instead of sauce, and make my own bechamel (white sauce) from scratch. Note: do not use fresh lasagne sheets as it turns to mush being cooked too long, learnt the hard way haha

  5. I had my doubts about cooking lasagne in slow cooker but it worked well and tasted lovely.
    The flexibility of being able to make it earlier is so good.
    I used my Breville Sear and slow cook so it truly was a 1 dish meal.
    Makes enough to feed a bigger family .

  6. Loved this recipe! I did tweak it a little, using 1 Tbsp (rather than 1 tsp) of garlic for extra flavour. I made my own cheese sauce in the Thermomix, and used probably twice the quantity of a jar sauce … which was most likely partly the cause of my lasagna being a little “liquidy” at the end. Will try tea towel trick next time. I was a bit sceptical about the lasagna sheets softening nicely (and not being too mushy), but the texture was perfect.
