Thai Fish Parcels

A lovely slow cooked fish parcel, also nice served with coconut rice as a side.

Ingredients
 

  • 4 Salmon fillets
  • 5 shallots chopped
  • Handful snow peas Julienned
  • 1 large carrot julienned
  • 1-2 red chillies
  • Handful finely sliced wom bok
  • 1 heaped teaspoon grated ginger
  • 1 heaped teaspoon grated garlic
  • 1 heaped teaspoon brown sugar
  • Juice of 1 lime
  • 1/4 cup light soy
  • couple drops of sesame oil
  • 2 tablespoons tamarind sauce or paste

Instructions
 

  • Place 4 sheets of baking paper in the bench
  • Arrange carrots, snow pea, chilli, spring onion and wom bok in a pile on the paper
  • Place the fish on top of the veggies
  • Mix all other ingredients together to form a sauce (the sauce can be adjusted to your liking)
  • Pour the sauce over each piece of fish
  • Wrap the Parcels up and place in slow cooker on low with lid on for 2 - 2 1/2 hours
  • Please note you can adjust the sauce, fish or the veggies to your liking.

  1. Great recipe loved the flavours, i use chilli paste not fresh chilli and a squeeze of lemon over the dish once served.

    This one is soooooo good ? was a hit with the family, husband said this one definitely do again ? served it with some simple rice
