Thai Coconut Chicken

A delicious mild curry that is super easy to make. This curry is loved by my whole family, even the fussy kids.

Ingredients
 

  • 1 - 1.2kg whole chicken thighs
  • 400ml can coconut milk
  • 2 tsp fresh/jar ginger
  • 2 garlic cloves finely chopped or crushed
  • 1 heaped Tbs of red curry paste
  • 1 Tbs fish sauce
  • 2 Tbs brown sugar
  • 1 pkt French onion soup

Instructions
 

  • Coat chicken thighs in plain flour and place in slow cooker.
  • In a jug, mix together remaining ingredients.
  • Pour over chicken.
  • Cook on low for approx 4- 5 hours

  1. its yum…i used yellow curry paste instead of red… bulked it with fresh onion and garlic and no teatowel trick so the liquid spread it further..served with jasmine rice and vegies, the most mildest heat at 1 heaped tbls… kids aged 6 to 15, plus hubby, all raved..

  2. Nice mild curry, I love mild curries because I can no longer have spicy so this hit the spot. I followed the recipe exactly and it turned out perfect, we served ours with plain rice and naan bread. Thanks Kirsty for your recipe

  4. My family loved this meal and as I had to feed 5 adults and 3 kids I just tripled the recipe and used drumsticks as well as thighes, I used yellow curry instead of red

  5. My family love this! My kids are 2 and 3 and somewhat fussy but both times they have eaten it all.
    I’ve made it with chicken thigh and chuck steak and we like it better with the steak.
    I also use yellow curry paste instead of red and don’t use ginger.

    Really enjoyed it and have leftovers …win, win ?

  7. Georgina, did you try it with fish? I am wanting to do the same. Just not sure of the times. I am probably going to have to guess.

  8. Unfortunately, I was not a fan of this recipe. It tasted weird to me. Not like a thai coconut curry. Perhaps it was the sweetness.

  9. Wow! This dish is so delicious. “Best dinner ever” according to my 8 year old who helped make it.

    I used 1.5kg chicken thighs, doubled the sauce and added carrot, capsicum and onion.

    I’ll be making this again for sure.

    Very easy to make and very tasty ? Used Green Curry Paste, as that was what I had. Served with Cauliflower Mash, Carrots, Edamane Beans and Roast Pumpkin. Will definitely make again.

    Thanks for the recipe, it was lovely. I added red capsicum and green beans to the curry, and once served, I added roasted cashew nuts and fresh coriander on top. Will definitely be making this one again.
