Sweet Potato and Pear Soup
The sweet flavour of pears gives this soup a unique but subtle twist
Ingredients
- 1.5kg Sweet Potato, small dice
- 4-5 Pears, peeled, cored and chopped (approx 800g)
- 1 eschalot, finely diced
- 1L Vegetable stock
Instructions
- Place potatoes, pears and shallot in slow cooker bowl
- Pour stock over the top
- Cook on high for 8-9hrs (Crockpot 3.5L sc)
- For a chunky soup mash with a potato masher or if you would like it smooth blitz in a food processor
- Season with salt and pepper if required to taste
Notes
- Can be served with a dollop of sour cream or greek yoghurt
- This Crockpot slow cooker cooks at a low temperature
