Sweet Potato and Corn Soup

A sweet soup for winter

Ingredients
 

  • 650g Sweet Potato, diced
  • 3 cups Corn Kernals
  • 2 Bay leaves
  • 1/4 tspn, Thyme
  • 4.5 cups Vegetable stock
  • Pinch Cracked Pepper
  • Pinch Salt

Instructions
 

  • Place sweet potato, 2 cups corn kernals, bay leaves, thyme, stock and pepper in slow cooker bowl
  • Cook for 8-9hrs on low (Crockpot 3.5L sc)
  • Transfer sweet potato and corn to food processor with 1 cup of liquid and blend until smooth
  • Return to slow cooker bowl and stir through reserved cup of corn kernals
  • Add salt if required
  • Continue cooking until corn is heated through

Note--

  • Those who can have dairy may need like to serve with a dollop of sour cream
