Sweet potato & cashew nut dip chicken

A creamy chicken dish based on sweet potato dip and coconut cream

Ingredients
 

  • 200ml coconut cream
  • 15g amount of basil
  • 2 x 200g tubs of sweet potato and cashew dip
  • 1kg chicken thighs
  • Handful of spinach
  • Corn flour (mixed with a little water) to thicken at the end

Instructions
 

  • Place all in ingredients in slow cooker except spinach and corn flour (set aside to place in 10 mins before serving)
  • Cook on low for roughly 3 to 4 hours

    Had no sweet potato & cashew dip, so, roasted a large sweet potato then mashed, chopped a cup full of cashews, added a sachet of taco seasoning instead of all the other seasoning, no basil, one red onion diced, 400mls of coconut cream, 1kg chicken thighs, couple of hands full of spinach at the end and didn’t need any corn flour to thicken, was ab fab and will make for awesome pie fillings!! Partner says he’d like that one again 🙂 Cooked for 4 hrs in 3.5lt Ronson

  2. Very easy to make and the entire family loved it and asked for seconds.
    The second time we made it, we added 400mL of coconut cream and it was just as lovely – excellent with rice as a hearty soup like meal.

  3. This was a hit with the family. Made it in a saucepan as I didn’t have enough time for the slow cooker. Will do again.

  4. I didn’t have the dip but I used mashed leftover roasted sweet potatoes with some curry powder. Was a hit with the family
