Sweet Chilli Chicken

Ingredients
 

  • I kg of chicken thighs
  • 1 onion
  • I cup of water added with one teaspoon of chicken stock powder
  • 1 cup of Sweet Chilli Sauce
  • Flour to dust the chicken in

Instructions
 

  • Warm the SC
  • Slice the chicken fillet in to cubes
  • Flour the chicken and then fry it, not all the way through. Just fry the coating(flour of the chicken)
  • Slice the onion very thinly and fry the onion in the oil that is leftover in the pan, The flour will thicken the chicken in the SC
  • Place the chicken in the SC and add the onion on top
  • Add water to a measuring mug and add stock and the Sweet Chilli Sauce
  • Cook for about 4 hours on low
  • Stir it after 2 hours
  • Served on rice with vegetables of your choice
  • You can add more or less of the Sweet Chilli Sauce. I used one cup and that was spicy enough.

    This was a winner! Did a half quantity in my 1.5l cooker 3 hours on low and 1 on warm. Served with rice, steamed beans and carrots. It will be a regular as it’s easy and tasty.

  2. This was amazing in flavor and so easy to make.
    I only used 1/4 cup water, I used tapioca flour to dust the chicken and added 1 Carolina reaper chili

    This will definitely be a repeat menu item

  3. This recipe is delicious, I added a sliced red pepper just for colour. Now on my ever growing meal planner.
