So sweet the kids love it! You can leave out the coriander if you like. The cream version is suitable for an entree when entertaining too.
6 hrs 10 mins
1kg carrots, chopped
1 cup pumpkin OR sweet potato chopped
2 brown onions, chopped
2 cups water
Handful coriander leaves
Teaspoon of dried mixed herbs
Sea salt pinches
Slivered almonds to serve
OPTIONAL: 250ml cooking or pouring cream (lactose free works perfectly too)
1All in slow cooker (except cream).
2High for 1hr & low for 5hrs.
3Season with salt & stick blend until smooth.
4Optional: Add cream if you wish now & stir through.
5Serve with almond slivers or coriander on top.
