Sweet and Sour Pork

Ingredients

Sauce:

1kg of diced pork

1 carrot

1 onion

1 tin of pineapple pieces

1/2 cup brown sugar

1/3 cup tomato sauce

1/3 cup soy sauce

1/2 cup vinegar

1/2 cup water

1 teaspoon ginger

3 tablespoons cornflour

Pork coating:

3/4 cup cornflour

3 eggs

Directions

1Coat pork in cornflour then coat in beaten egg. Shallow fry until coating is browned. This doesn't need to be cooked through and can be done in batches.

2Drain the juice from the can of pineapple and retain for the sauce.

4Add the pineapple to the pork in the cooker.

6Mix the sauce ingredients and add to the cooker.

8Cook for 2-3 hours on high

Yum! Cooked this for dinner the other night, paired with the slow cooked fried rice. It was lovely and the meat tender. It needed a wee bit longer cooking time that the recipe stated and I thought the sauce would have been a bit ‘runnier’. I think next time I’ll use a bigger can of pineapple, maybe that was the issue. Otherwise 8/10! thanks for sharing!
