Sweet and Sour Pork

Ingredients
 

  • Sauce:
  • 1kg of diced pork
  • 1 carrot
  • 1 onion
  • 1 tin of pineapple pieces
  • 1/2 cup brown sugar
  • 1/3 cup tomato sauce
  • 1/3 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1 teaspoon ginger
  • 3 tablespoons cornflour
  • Pork coating:
  • 3/4 cup cornflour
  • 3 eggs

Instructions
 

  • Coat pork in cornflour then coat in beaten egg. Shallow fry until coating is browned. This doesn't need to be cooked through and can be done in batches.
  • Drain the juice from the can of pineapple and retain for the sauce.
  • Add the pineapple to the pork in the cooker.
  • Mix the sauce ingredients and add to the cooker.
  • Cook for 2-3 hours on high

  1. Yum! Cooked this for dinner the other night, paired with the slow cooked fried rice. It was lovely and the meat tender. It needed a wee bit longer cooking time that the recipe stated and I thought the sauce would have been a bit ‘runnier’. I think next time I’ll use a bigger can of pineapple, maybe that was the issue. Otherwise 8/10! thanks for sharing!

  2. The coating turned out really mushy when I made this tonight. I’m not really sure why ?? The sauce flavour was great though! I also didn’t have a lot of runny sauce, but I’m guessing that’s because the coating soaked up a lot of the liquid.

  3. I halved the recipe for me and hubby and still had plenty left over for lunches etc
    Really yummy! Enjoyed the flavours! I would add more pineapple but that’s personal preference. Added plain white rice as a side 🙂
