1.5L, Baking, Dessert

1 and 1/4 cups of water
1 cup of sultanas
1 teaspoon of bicarbonate of soda
1 cup of self raising flour
1/2 cup of castor sugar
good heaped teaspoon of mixed spice
50grms of butter or marj
2 lightly beaten eggs
1Boil 1 and 1/4 cups of water with 1 cup of sultanas
2take off heat and add 1 teaspoon of bicarbonate of soda (it will froth up)
3put in a big bowl and stir in all other ingredients
4pop into a greased (butter or marj) 1.5lt sc
5put a tea towel under the lid and cook on high for 1.5 hours
6if inserting a skewer to test when done the skewer will come out a little sticky - this is done!
7perfect hot or cold :)

Looks good, smells good, tastes good . Did rise as much as the picture but super moist. 😋 will make again

You could do it in another sized slow cooker but a large one like yours will of course be a thinner cake so will cook much quicker
Just keep an eye on it for when it bounces back when lightly touched in centre or when a skewer inserted comes out clean 🙂

Made this and was beautiful. Second time I made it with dates instead of sultanas and had it with icecream yummy 😋. Thankyou for the recipe 😉
