Super easy Vegetarian Lentil Lasagna

Ingredients
 

  • 1 Jar of Passata (or tomato pasta sauce)
  • 1 Cup dry red lentils
  • 1 Cup of hot water

  • 1 packet (500g) lasagne pasta
  • 2 cups hot water
  • 1 cup frozen spinach
  • 2 Tbs pesto
  • Salt/pepper to taste
  • 1 cup cheese

Instructions
 

  • Put the jar of passata and the red lentils in the slow cooker with one cup of hot water on high
  • Cook for three hours
  • Add the pasta, the rest of the hot water, the greens, pesto and salt/pepper to taste
  • Stir and sprinkle cheese on top
  • Cook on high for 2-3 hours.
  • Add a teatowel for the last hour to make it more crispy.

  1. Hello. I prepared it with whatever pasta I had, didn’t have lasagna sheets. Anyways, it turned out to be great!!! My 8 year old son who is quite picky had 2 portions, so it speaks for itself. Thanks 🙂 ??

  2. Cooked this today, the family loved it. I want to try this in the 1.5 litre slow cooker, so I can make small batches for lunches. It is very tasty indeed, and will be a regular event at our place. Note, instead of using just cheddar, I added some parmesan.

  3. A quick throw together for stunning flavour. I added a bit of sambal oelek (chilli) for spice, and I’ll be doing that again. Love this so much that I made extra for my work lunches (freeze and re-heat works well). This will be a regular item in my menu, even though I’m not vegetarian.

    Mine turned out a bit dry maybe because I added extra ingredients like mushrooms onion garlic and herbs, I will make it again but will also add a white sauce. Nice to add another meatless dish to the menu.

    I usually don’t have pesto so I might add tomato paste, or sweet chilli sauce instead.
