St Clements self saucing pudding

A deliciously juicy pudding with a lovely citrus hit.

Ingredients
 

  • SPONGE
  • 200g light brown sugar
  • 200g butter
  • 3 eggs
  • 200g self raising flour
  • Zest of 3 lemons
  • Juice of one lemon
  • SAUCE
  • 100g light brown sugar
  • 100g golden syrup
  • Juice of 2 lemons topped up to 300mls with orange juice

Instructions
 

  • Mix butter and sugar until creamy
  • Add and beat in eggs
  • Mix in flour until smooth
  • Fold in lemon zest and juice
  • Pour in greased slow cooker bowl
  • Put all sauce ingredients in a microwavable jug and heat for 90 seconds
  • Stir to mix and dissolve sugar
  • Pour over sponge mix
  • Cook on HIGH for 2 hours with tea towel under the lid - Tea Towel Trick

  1. Made this for my family and they loved it. Served warm with ice cream. Sweet and tangy it certainly was a hit.

  2. I want to make this for friends for lunch but need to go out for 4 hours will this rise and do the cake thing if it’s cooked on low for 4 hours? Rather than high for 2.
