Spanish Style Chicken Drumsticks

Ingredients
 

  • 1 1/2kg Drumsticks (12 medium)
  • 1 red onion - sliced, I used brown
  • 1 lge chorizo sausage - sliced
  • 150g sundried tomatoes
  • 100g chargrilled capsicum strips
  • 200g sliced mushrooms
  • Add a few olives if u like. I don't do olives but
  • 1x400g can chopped tomatoes
  • 1 cup chicken stock
  • 2 Tbsp tomato paste
  • 1 Tbsp Balsamic vinegar
  • 2 Tbsp brown sugar
  • 2 Tbsp Smoked Paprika
  • 2 tsp garlic (jar will do)
  • 2 tsp ginger grated (jar will do)
  • 2 Tbsp parsley (gourmet garden semi dried) or fresh
  • 1 Tbsp chilli (gourmet garden semi dried) or fresh
  • Salt and Pepper to taste and mix well

Instructions
 

Add straight into slow cooker... chicken, onion, chorizo, tomatoes, capsicum strips, mushrooms and optional olives.

    In a separate bowl add other ingredients, pour this liquid over chicken. Don't bother mixing it all just yet, let it do it's thing. Cook around 4hrs on low and when cooked remove chicken and thicken sauce.

      Notes

      • Serve with mash and greens and pour sauce over the chicken YUMMM.
      • I am using my 5lt oval SC that has a metal bowl and cooks a bit quicker than my ceramic bowl SC's so cooking time will vary with all Slow cookers.
      • I serve this with Mashed Potato and Greens. Enjoy

      1. What a lovely dish, thank you. I did make a couple of changes as I didn’t have any chorizo I added a Ham steak along with a couple of tablespoons of capers. I also took the meat off the Drumsticks while the sauce thickened at end and mixed it through before serving with peas and a mash of cauliflower, carrot and Parsnip. Enjoyed by everyone. Smelled lovely while it was cooking too ?

      2. hi. I’m just wondering if the chorizo is the ready to eat type from the deli or the sausage ones from the meat section?

        Unbelievably easy, and the flavour is awesome. This would also be nice with chicken breast left whole. 10/10
