Spanish Style Chicken Drumsticks

add straight into slow cooker...
11 1/2kg Drumsticks (12 medium)
21 red onion - sliced, I used brown
31 lge chorizo sausage - sliced
4150g sundried tomatoes
5100g chargrilled capsicum strips
6200g sliced mushrooms
7handful of olive-optional
in a separate bowl add
11x400g can chopped tomatoes
21 cup chicken stock
32 Tbsp tomato paste
41 Tbsp Balsamic vinegar
52 Tbsp brown sugar
62 Tbsp Smoked Paprika
72 tsp garlic (jar will do)
82 tsp ginger grated (jar will do)
92 Tbsp parsley (gourmet garden semi dried) or fresh
101 Tbsp chilli (gourmet garden semi dried) or fresh
11Salt and Pepper to taste and mix well
12Pour liquid over chicken don't bother mixing it all just yet, let it do its thing
13cook around 4hrs on low and when cooked remove chicken and thicken sauce.
1Serve with mash and greens and pour sauce over the chicken YUMMM.
2I am using my 5lt oval SC that has a metal bowl and cooks a bit quicker than my ceramic bowl SC's so cooking time will vary with all Slow cookers.
3I serve this with Mashed Potato and Greens
