Slow Cooker Lumberjack Cake

Low sugar, dates, apples and wholemeal flour. A quick, easy, moist and healthy treat.

Ingredients
 

  • 1 cup pitted dates
  • 1 cup pie apples
  • 1 cup boiling water
  • 1 tsp bicarb soda
  • 1/2 cup brown sugar
  • 100g butter, cubed
  • 1 1/2 cups plain wholemeal flour
  • 2 tsp baking powder
  • 1 egg
  • dessicated coconut for topping

Instructions
 

  • Chop dates in food processor.
  • Add apples and bicarb then boiling water.
  • Then add remaining ingredients and process just enough to combine.
  • Pour into lined preheated small slow cooker, sprinkle top with desiccated coconut, bake on high for one to two hours.

  1. Could you please tell me if this cake will work if i put it within a cake tin into my larger slow cooker? I don’t have a 1.5 litre slow cooker.

    Loved it thanks for sharing, I swapped out the dates for mixed fruit and didn’t add the sugar because I had stewed the apples in sugar.
