Juicy tender mouth watering parcels sure to entertain your tastebuds. Prep: 15 mins Cook: 1 hr 45 mins 15 mins 1 hr 45 mins 2 hrs Yields: 4-5 hungry bellies with sides Ingredients800g skinless chicken thigh/breast ~100g thin sliced ham of choice ~80g sliced Swiss cheese 1 egg 1 1/2 cups panko bread crumbs 1 teaspoon cracked black pepper 4 teaspoons Tuscan seasoning Toothpicks Directions1Lay one piece of chicken on a sheet of baking paper 2Overlay one sheet of baking paper 3Using a food mallet, flatten chicken to a thickness of 1/2-1/4 cm 4** see video link ** 5Reusing sheets, repeat till all chicken is adequately flattened 6Place one slice of ham over each chicken piece 7Place one slice of cheese over each ham slice 8Roll each individual piece and fasten with two or more toothpicks 9Lightly grease cooker insert 10Turn cooker on HIGH 11In a bowl crack egg and quickly mix egg but not over whisk it 12In a separate bowl, combine panko, pepper and Tuscan seasoning 13Brush each chicken roll with egg 14Put into panko mix and coat by rolling/sprinkling 15Place rolls into greased warmed cooker and cook for 1hour 45 minutes on HIGH 16*note. Cooker times will vary, I used a 7 litre Breville for this delight 17Serve with a selection of fresh vegetables.
