Slow cooked spicy Cajun pulled pork served on a red cabbage

Ingredients
 

  • Pork
  • 6 Cloves of Garlic, finely chopped
  • 2 White onions, chopped
  • 8 Tablespoon pickled Jalapeno Chilies, Drained
  • 4 Tablespoons Apple Cider Vinegar
  • 1 Cup Tomato Sauce (home made if possible)
  • 6 Tablespoons Barbecue Sauce
  • 4 Tablespoons Cajun Spice Mix
  • 6 teaspoons Ground coriander
  • 1.6-2Kgs of pork Fat and skin removed ( i used a shoulder roll and cut in half)
  • 3 Cups Chicken stock
  • Red Cabbage with honey and mustard
  • 3/4 of a red cabbage (600g) finely shredded
  • 1 onion finely sliced
  • 2 cloves garlic, finely sliced
  • 2 tablespoons of apple cider vinegar or red wine vinegar
  • 1 tablespoon wholegrain mustard
  • 3 teaspoons of honey

Instructions
 

  • For pork
  • Put garlic, onion, chill and vinegar in food processor, make smooth.
  • In a frying pan add spice mix, garlic mix and sauces bring to boil, put in Slow cooker, add stock and pork, cook on low for 8 hours, Remove pork and pull apart and then add back to sauce, serve with braised red cabbage (recipe bellow) Or steamed greens with lemon juice
  • For Cabbage
  • add all ingredients and 2 tablespoons of water in a medium saucepan,
  • cook covered over low heat stirring every now and then about 15 mins until its soft but still some bite.
  • Remove lid for last 4-5 mins so most of the liquid is gone,
  • Serve and top with pork and then a sprinkle of white onion or more chili

  1. This was such a lovely recipe, easy and very tasty. I did my own coleslaw and dressing, but I reckon it would be good with this red cabbage recipe too.

  2. This was a great recipe, easy and really tasty (I added a fresh green chilli to the paste mix) we had with rolls and my own coleslaw and dressing, highly recommend.
