Slow Cooked Pork rashers in Plum Sauce

Ingredients
 

  • Pork rashers (I used 3 packs from woolies about 9 in a pack)
  • 1/2 cup of plum jam
  • 2 chicken stock cubes
  • 3 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1/4 cup brown sugar
  • 1/2 cup water
  • Corn flour to thicken

Instructions
 

  • Place the pork rashers in the slow cooker.
  • Combine all ingredients and pour over the pork. (The pork releases a lot of its own juices making it really liquidy so half way through I placed pork on a tray while I emptied the juice in the saucepan and thickened up with cornflour on the stove and added a little bit more plum jam and brown sugar) popped it all back in the slow cooker. Cooked on high for 4 hours and low for 2.

  2. Do you think you could you just omit the water? Would that mean I don’t have to thicken on the stove half way, or is it more likely to create new problems?

    Sweet and sticky and saucy! YUM!! After I have removed the rashers from the pot, I dump my cooked rice in and mix it with the sauce. Served it with steamed vegetables. Thank you, Rhiannon!
