Quick and easy vegetable side dish

  • Yields: 8 as a side dish

Ingredients

800g of shredded stir-fry vegetables (you can buy them packaged in produce section or shred your own)

- Red Cabbage

- White Cabbage

- Wombok

- Carrot

- Broccoli

- Spring Onion/Shallots

1 cup salt reduced liquid vegetable stock

1 heaped teaspoon minced garlic

1 heaped teaspoon minced ginger

1-2 tablespoons of Maggi Original Seasoning (It's an Asian flavour similar to soy sauce)

Directions

1Combine all ingredients in slow cooker

2Cook the first 10mins on searing/HIGH

3Stir through to combine the liquid and vegetables again

4Then turn it down to slow cook on LOW for an additional 20mins

Notes

1Served as a side dish to BBQ steak and it was delicious and easy

2Vegetable volume could be halved to serve 4 if desired
