Chicken Schnitty with BBQ Bacon & Cheese

Ingredients
 

  • 12 smaller burger sized crumbed chicken schnitzels
  • 6 small ripe tomatoes (or 3 large), diced small, drained well
  • 6 rashers streaky bacon, diced
  • 1T dried Italian herbs
  • 2/3 cup BBQ sauce
  • 2 cups grated tasty cheese

Instructions
 

  • Place the schnitzel into slow cooker in single layer
  • Combine the drained diced tomato, diced bacon, herbs and sauce and mix well. Spoon this mix generously over each schnitzel
  • Cook on low for 3hrs 45mins with tea towel trick in place
  • Add generous amount of cheese to top of each schnitzel and cook for an additional 15mins to melt well
  • Serve with side salad and chips

Note

  • You can of course swap these smaller schnitzels for full sized ones if you prefer
  • I do mine in two slow cookers at once but you can reduce number to your size/family needs
  • The tea towel trick ensures they stay crisp and crunchy, not soggy

    Another 5 star recipe! Actually was not the planned dinner, but the meat i had thawed was not pleasant when I unwrapped it ? so this stepped in as a rescue dinner and so glad it did!
    Easy, used pantry staples I already had and SO delicious. I used the Ingham boxed Louisiana hot spice schnitzels, added onion and liquid smoke to the sauce mix ? absolutely will be doing again!

    Hi Pauline have a question regarding the tomatoes is that tin all fresh as you have said to drain well so I was confused about that thanks .

    Kids said it was better than pizza!!! Clean plates all round. Added extra cheese cause it’s cheese, didn’t have tomato.. served with some chips!! Will be making it again, thanks for the recipe ?
