Satay Chicken

Ingredients
 

  • 1kg chicken thigh fillets
  • 2 cloves garlic crushed
  • 3 tablespoons of peanut butter
  • 2 tbsp of soy sauce
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of tomato sauce
  • 1 tablespoon of sweet chilli sauce
  • ¾ cup coconut milk
  • 3 tablespoons of cornflour

Instructions
 

  • -Place chicken into slow cooker bowl - you can slice chicken first or slice it towards the end and then return it to the pot sliced.
  • - Mix 2 tbsp cornflour with coconut milk before adding. Then add combined peanut butter, sauces, garlic and coconut milk.
  • -Cover and cook on low for 6hrs or high for 3hrs (cooking time varies between slow cookers)
  • -To thicken sauce: mix final spoon of corn flour with a dash of water and add to dish towards the end of cooking if needed

Notes

  • Vegetables can be added to the sauce if you prefer. Diced red capsicum is nice, or fine sliced vegetables such as carrot, celery and onion are another option but keep them thin slices.

  1. Such an easy dish to prepare and the result was delicious. The sauce was lovely and rich with a beautiful nutty taste. I used crunchy peanut butter so it added that extra texture. I also added 1 extra tbsp on peanut butter and a thinly sliced shallot. I reduced the cornflour to 2 tpns. I will definitely be making this again and again ??

  2. This was great. I used 1.5kg thighs (8) and used a whole can of carnation coconut milk. I also adjusted the sauces to suit the extra chicken (1.5 x the recipe). For my cooker I would’ve put the cornflour in last as it was a bit thick & started to burn around the edges & needed to be stirred through cooking. I did 1hr on high & 3.5 on low.

  3. Really enjoyed this! I love satay and this was a wee bit too nutty for me so added extra of the other sauces. Next time will use slightly less peanut butter. Served with noodles which I just chucked in near the end. Will make again.

  4. Winner, a new family favourite. I doubled the recipe and used chicken breast also added one small red capsicum sliced, diced onion and 2 teaspoons of curry powder and it tasted amazing.

  5. Made this and it was delicious. I used 3 pieces of chicken breast, didn’t have Worcestershire sauce. I didn’t need to use the 1 tablespoon of cornflour at the end as the satay with thick. Definitely a dish I will be making again ??

  6. Awesome dish, I used coconut cream and added more than recipe suggested plus more peanut butter and sweet chilli sauce to suit our tastes. It was amazing and will definitely make again!

  7. I used tomato paste instead of sauce and an extra tbsp of soy. I put the chicken thighs in whole, and it became shredded chicken as I stirred. It was very thickand and did not need the extra corn flour at the end- next time I’ll try just I tbsp corn flour at the start. I also added a pkt of stir fry veg 1 hr before the end and 1/4 cup of roughly chopped salted peanuts- i think the peanuts really made it. I called it peanut butter chicken & my toddler enjoyed it.

  8. I cooked this last week as previously I had used the same Recipe was chewing steak and that was delicious! The chicken was also delicious. The only change I made was I add onion to everything! Love onion

  9. Added two teaspoons of peanut powder. Enhanced the flavour. Beautiful. Will be a regular in our house. Served with Malaysian fried rice.

  10. Used 1kg gravy beef. 400ml coconut milk added small handful chopped peanuts. Broccoli, carrots, celery and onion.
    Enjoyable and tasty recipe and much better than take away!

    Tried this chicken satay recipe last night served on pasta. My 16month old son had 2 bowls of pasta and just sauce and partners 15year old had about 2 or 3 plates of it even though I tripled the sweet chilli sauce in it. Been asked to make it again lol

  12. We made this to the recipe above amd the wife said it was missing flavour and bite. She said it was bland. Any suggestions on what to do next time as I love satay dishes

    Easy to make & everyone loved. Served with rice.
    Used whole can of coconut milk but will use coconut cream next time. Cooked for 4 hours on Auto setting.
