Rolled Turkey Breast Roast with Vegetables

A rolled turkey roast with a full array of roast vegetables all slow cooked together for a one pot roast dinner!

Ingredients
 

  • 2kg turkey breast roast (see notes below)
  • 3 medium potatoes, peeled and cut into quarters
  • 1/2 butternut pumpkin, peeled and cut into quarters
  • 2 large carrots, peeled and cooked whole (cut in half at serving time)
  • 1 large onion, cooked whole (cut to serve)
  • 1 large sweet potato, cut into quarters
  • 4 large stalks of fresh rosemary
  • Salt and Pepper
  • Instant Gravy powder sachet

Instructions
 

  • Line slow cooker with baking paper
  • I use a 7L slow cooker
  • Place turkey in centre and vegetables pieces around them
  • Place potatoes on the bottom then layer on onion, sweet potato, pumpkin then carrot
  • Season with salt and pepper and lay rosemary stalks on top
  • Cooking on low 8hrs
  • At serving time remove turkey and veg to serve then use some pan juices to add to your gravy sachet to make finishing sauce 🙂

Notes

  • No liquid needs adding, it will make plenty of it's own
  • I use the frozen box variety rolled turkey roast but must be FULLY defrosted first
  • The same can be done with a similar CHICKEN rolled roast

  1. Is there a time to cook on high? I hope to serve this at lunchtime but I want to avoid getting up at 2 am on Christmas day!

    1. Unless you eat lunch at 10am you wouldn’t have to get up at 2am!
      You could lessen time by cutting the veg smaller
      The turkey on it’s own would cook in 5-6hrs low, that’s another option (then keep veg much smaller cut if you want to add them too)

    This turned out absolutely beautiful. I just had a 1kg rolled roast and scrunched up tin foil for it to sit on then put the paper in with the roll and rosemary.
    Cooked on slow for 6 hours.
    I’m never going back to using the oven again.
