Roast Chicken - Stuffed full of Flavour!

Roast chicken with garlic, onion, thyme and lemon pepper butter. Low Carb friendly also 🙂

Ingredients
 

  • I whole chicken
  • 1 brown onion quartered
  • 7 cloves of garlic peeled
  • 1 bunch of thyme (around 15-20 small stalks)
  • 1 lemon
  • 2 tblsp butter
  • 2-2 tsp cracked black peppr

Instructions
 

  • Take one whole chicken with giblets etc removed from cavity
  • Cut lemon into quarter and retain half
  • Place the other 2 quarters of lemon, the onion quarters, the whole garlic cloves and the thyme inside cavity of chicken
  • Place chicken in slow cooker, breast down
  • Optional: I slow cook my chickens on a chicken sling and slightly elevated from the cooking liquids on a trivet.
  • Then using a sharp knife make incisions over surface of chicken facing up
  • Mix the just melted butter with black pepper and the juice of another lemon quarter (approx 1 tblsp) and brush all over chicken and into the holes you've pierced.
  • The remaining 1/4 lemon can be discarded or used for garnish on the finished dish
  • Cook on LOW for 6hrs

    Fabulously easy and sooo tender and tasty!!
    Yes it’s pale but we never eat the skin anyway, and it comes away so easily. No more woolies BBQ chooks for us means no more dried legs you can’t get the skin off ? Plus I’m now cooking gramma’s chicken dressing that I haven’t made since I first came here and stopped making roast chicken.
