~~Pumpkin Fruit Cake~~

Ingredients
 

  • 1 cup mashed pumpkin
  • 125 grams butter
  • 3/4 cup sugar
  • 2 tbsp golden syrup
  • 2 eggs
  • 2 cups S/R flour
  • Pinch of salt
  • 250 grams mixed fruit
  • 150 grams raisins

Instructions
 

  • Beat pumpkin,butter & sugar together.
  • Then add syrup & eggs.
  • Stir through the fruits.
  • Then fold through the flours & salt.
  • Line & grease Slow cooker.
  • Pour in mixture.
  • Cook for 2hr 30mins on HIGH

Notes

  • I use my 3 litre Slow cooker & it makes 2 small cakes or 5 litre makes 1 large cake.
  • lt is really nice with pecan nuts also.
  • This cake is so lovely and moist,it is a Family Favourite.
