Preserved Mandarin Peel in Syrup

Great to add to desserts cakes or over ice-cream. This recipe can be made using other citrus.

Ingredients
 

  • 2 cups Water
  • 2 cups Sugar
  • 2 Sumo Mandarins

Instructions
 

  • For syrup - Add water and sugar in a pot and dissolve sugar. Liquid should be clear and slightly thick.
  • Peel mandarins and remove white pith as much as possible.
  • Slice thinly and place into the 1.5 litre slow cooker.
  • Pour syrup over sliced peel.
  • Turn on slow cooker to low and let it cook for around 5 hours.
  • Pour/spoon into sterilized jars put lid on while still hot and let cool.
