A great warming and filling soup for winter!

Ingredients

2kg Potatoes, peeled, roughly chopped

2 leeks, washed, sliced (white section only)

2tsp crushed garlic

1tsp onion powder

1Ltr Chicken Stock

Meaty smoked Ham Hock

Tray of Pork bones (optional)

Optional additions

Cream and Cheese (see method)

Directions

1Set slow cooker to sear (if your slow cooker doesn't have this function, use a fry pan)

2Add a little olive oil, and fry off leek

3Change setting to LOW

4Add in garlic, potatoes, bones and hock

5Pour stock over, and cook for around 4 hours on low

6Remove smoked hock and pork/bacon bones, set aside to cool enough for ease of handling

7At this point, I blitz the potato mixture.

8Add meat (removed from bones) back into slow cooker, with a slug of cream (optional), and a good handful of tasty cheese (optional), salt and pepper - heat through, and serve with crusty bread
