A one pot meal for those nights when you don't want the hassle of side dishes when you get home

Pork Chops or Pork Belly
3 Apples, cut into wedges
1/4 Leek, sliced
2 large Potatoes, cut into wedges
3 carrots, cut into sticks
3 parsnips, cut into sticks
100mls Vegetable stock or 1/4 tspn Vegetable stock powder and 100mls water
I generally use 1 Pork Chop per person depending on size or approx 1.5kg piece Pork Belly
1Place apples and leek in slow cooker bowl
3Add pork, then potatoes, carrots and parsnip on top of pork
4Cook for 6-7hrs on LOW (Contempo 5.5L sc)
5Add beans with approx 1hr remaining

I tried this tonight as I was getting over frying the pork chops. This was great. The meat fell off the bones and my partner wants me to cook it again.
