2 large red onions, sliced

salt and pepper to season

100mls apple cider vinegar

500mls apple cider

Variation

500mls apple juice in place of apple cider

Directions

1Layer onions in bottom of bowl, diced pork, then pork belly.

2Season with salt, pepper and garlic.

3Place the apples on top and around pork.

4Pour the cider vinegar and the apple cider over.

Notes

1Works great as a pulled pork using a whole piece of pork, just add a couple of tblspns of Cornflour.
