Pork Tenderloin Fillet with Honey Mustard

Soft, tender juicy pork slices cooked in a decadent honey mustard serving sauce

Ingredients
 

  • 1 - 1.5kg of pork tenderloin fillet (I used 3 long thin fillets)
  • 1/2 cup honey
  • 2T yellow mustard
  • 1T wholegrain mustard
  • To thicken: 1T cornflour mixed with 1T water

Instructions
 

  • I cut each long pork fillet into two pieces, but you can leave them whole if you prefer
  • Combine honey and mustards and pour over pork
  • Cook on low for 4.5hrs
  • Remove pork and set aside to rest while you prepare the sauce
  • Place searing slow cooker on stove top (or pour cooking liquids into saucepan on stove)
  • Add cornflour slurry and reduce/thicken over heat for 5-10 mins or until thicker and glossy
  • While sauce is thickening, slice pork fillets and then pour over the honey mustard serving sauce
  • Delicious with roast vegetables or mash and steamed veg

  2. Made this as per the recipe & family loved it. Went to make it again the other day and had no honey so swapped it for a jar of apple sauce, was just as good!
