Peanut Butter Cookies - Low Carb
Avoiding carbs doesn't have to mean avoiding cookies with these bad boys!! Just 1.5g carbs each 🙂
Serving: 24
Ingredients
- 1 cup of peanut butter (I chose smooth but you could do either)
- 1 egg
- 1/2 cup of granulated splenda
- 1 tsp vanilla essence
Instructions
- Combine all ingredients well to form cookie dough
- If your dough is too moist you can sprinkle another spoon of splenda over and combine but you shouldn't need to
- Line slow cooker with a sheet of non stick baking paper
- Roll cookie dough into small balls - about 1-2 tsp each ball
- I made 24 balls
- Space balls out over the baking paper and pres each one down lightly with a fork
- Cook on HIGH for 1hr with The Tea Towel Trick
Notes
- Each cookie is approximately 1.5g carbs

Do you do this in layers or do all the cookies fit in one layer?
All fit in one layer in my 7L rectangular cooker
Hi, I don’t use splenda or other like alternatives. Is there something else that might be suggested. I realise this might change the carbs but another low carb option maybe coconut flour?
If you aren’t concerned with keeping it low carb you can just use sugar 🙂

I suppose you could use honey instead of sugar or alternative?

How many grams in one cup?
Around 250g I believe … I just use a measuring one cup measure and fill it 🙂
