Chicken and Minestrone Soup

Ingredients
 

  • 4 chicken marylands, boiled, deboned
  • 2 large carrots
  • 4 medium potatoes
  • 1/4 of a butternut pumpkin
  • 2 onions
  • 1 heaped tablespoon of powdered chicken stock
  • 1 jar of pasta sauce
  • 1 parsnip
  • 1 turnip
  • 1 swede
  • 1 large stalk celery
  • 1 can of baked beans
  • 2 medium sweet potatoes
  • Salt and pepper
  • 1/2 cup of sweet chilli sauce
  • 250g shell pasta

Instructions
 

  • Put deboned cooked chicken in slow cooker
  • Dice all vegetables and put in slow cooker
  • Add baked beans, pasta sauce, sweet chilli sauce and salt and pepper
  • Cook on low for 6 hours
  • In the last hour add 250g pasta shells
  • Notes: Can leave out sweet chilli sauce or add other vegetables

  1. Although The recipe refers to a jar of pasta sauce the directions don’t mention it at all. I assume it goes in with the beans.

  2. I added 4 cups of stock. I found it too spicy so next time I would leave out the sweet chilli sauce. Overall, a delicious soup.
