A very healthy and hearty beef soup

2.5 litres beef stock
1 kg gravy beef
1 onion
1 tsp minced garlic
salt & pepper to taste
2 carrots
2 parsnips
2 potatoes
1 stalk celery
4 chillis
1 swede
1 capsicum
5 tsp's Gravy powder
1Dice meat, 1cm
2Use a 6.5 l slow cooker
3Brown meat with onions and minced garlic, drain off fat
4Chop all vegetables
5Add all to slow cooker with stock
6Cook 5 hrs on low
7Check thickness and add gravy powder mixed with half a glass of the soup
8Cook another 1/2 hour checking thickness/adding more gravy powder if required
9Cook another 1/2 hour
Notes
1My former mother in law taught me this recipe and I have amended the ingredients to my taste.
2All vegies and chillis are optional.
3You can change according to your tastes.
4Beautiful with warm crusty bread.
5Freezes very well.
