Mixed Berry cake – Gluten Free

Ingredients
 

  • Gluten free mixed berry cake
  • 3/4 cup of coconut flour
  • 2 tsp gluten free baking powder
  • 1/4 cup coconut sugar
  • 5 eggs
  • 3/4 cup coconut milk
  • 1/2 tsp vanilla extract
  • 1/3 cup coconut oil
  • 1 cup frozen mixed berries

Instructions
 

  • Method
  • * melt coconut oil
  • * Place eggs, sugar,vanilla and milk in a bowl and whisk until combined
  • *when coconut oil is cool add to egg mixture
  • * Mix baking powder with flour then add egg mixture
  • * stir in berries
  • * place mixture in slow cooker, I used baking paper
  • * cook on high for 2 1/2 hrs
