Meatballs and Sauce

Servings 4 hearty dinner or 6 lunch-sized portions

Ingredients
 

Meatballs

  • 600g pork or beef mince
  • 1 egg
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp smoked paprika

Sauce

  • 1 x 500g jar passata
  • 1/2 capsicum (diced)
  • 2 tomatoes (diced)
  • 1 onion (diced)
  • 3 cloves of garlic (crushed)
  • 3 large leaves silver beet or spinach (shredded)
  • 1 oxo cube and 1/4C water to dissolve
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp chives
  • 2 bay leaves

Instructions
 

  • 1. Mix all the ingredients for the meatballs together, and use your hands to form the mixture into balls as big or small as you wish. Pop into the slow cooker.
  • 2. Mix all the ingredients for the sauce together in a bowl and pour into the slow cooker. Gently mix together with the meatballs so they don't break apart.
  • 3. Cook on low for 4-5 hours, or high for 2-3 hours. Remember to remove the bay leaves once cooked!
  • 4. Serve on pasta or rice, with a sprinkle of whatever cheese you fancy. We also made a nice salad with veges from our garden to accompany the dish.
