Mexican Tater Tot Casserole

Ingredients
 

  • 1kg / 2lb lean beef mince/hamburger
  • 2 diced tomatoes
  • 1 diced red onion
  • 1 diced green caspicum/bell pepper
  • 1 to 2 pkt's taco seasoning mix (depending on how spicy you like it)
  • 1 can diced tomatoes
  • 1 bag of potato gems/tater tots
  • 3/4 cup grated cheese (I used low fat)
  • Sour cream and mashed avocado to serve

Instructions
 

  • Place raw beef mince in slow cooker (no need to pre brown)
  • Add next 5 ingredients and stir to combine
  • Cook on low for 4hrs
  • Add a bag of frozen potato gems on top of mince and return to cooking on low for 2hrs more
  • Half an hour before serving top with grated cheese and continue cooking until cheese melted
  • Serve with a dollop of sour cream and mashed avocado
  • *Note*
  • If you choose to brown your mince first then reduce the first cooking time down to 1hr before adding the potato
  • However browning is not required

  1. Tonight I finally made this and it was amazing! I bought tater tots weeks ago when first I joined this group and saw this recipe, never bought them before. So simple, tasty and we will make again for sure.

  2. OMG, this is the bomb! I added chilly beans and corn to the mixture as well. The potato gems complemented the Mexican mince superbly and the avocado and sour cream topped it off nicely. Will be a regular, thanks so much Pauline!

  3. I’ve made this a couple of times now and it’s sooo good and easy to make. I didn’t have a capsicum (grated two carrots instead and mixed through) and substituted the tinned tomato’s for a can of condensed tomato soup. This will be a regular in my house and all the family enjoy it.
