Massaman Chicken Curry

Quite a sweet curry can substitute chicken for beef and coconut milk for Greek yogurt if preferred.

Ingredients
 

  • 1 kg chicken drumsticks
  • 1 potato diced
  • 1 onion diced
  • 1 cup diced pumkin
  • 1 400ml coconut cream
  • 1/2 jar massaman curry paste
  • 1/2 block of frozen spinach
  • Salt n pepper to taste

Instructions
 

  • Brown chicken in large fry pan (optional) and place in slow cooker.
  • Fry off onion add potato and pumpkin and cook for 2 minutes.
  • Turn heat down and add massaman paste for 2 mins then stir through coconut milk and cook for another minute.
  • Tip into slow cooker season with salt and pepper.
  • Cook on low until 4-5 hrs until chicken falls off the bone.
  • Pick out and discard bones.
  • 30 mins before serving add spinach and stir through.
