Massaman Beef Curry

Ingredients
 

  • 700g chuck beef, diced
  • 4 potatoes, cut into rough chunks
  • 1 onion, roughly cut
  • 270ml can coconut milk
  • 270ml coconut cream
  • 1/4 cup Massaman curry paste (I like the Aldi brand!)
  • 2 bay leaves
  • 6 cardamom pods, bruised
  • 1 cinnamon stick
  • 2 Tblsp brown sugar
  • 1 Tblsp fish sauce
  • Fresh lime

Instructions
 

  • Put cut potatoes, cut onions & beef into slow cooker.
  • In a fry pan, pour in coconut cream & coconut milk, cook stirring until it starts bubbling.
  • Add curry paste & work in to get rid of the lumps.
  • Add bay leaves, cardamom pods & cinnamon stick & cook until fragrant.
  • Pour mixture into slow cooker.
  • Cook on low for 7-8hrs or high for 4-5hrs (I have a 6L sc).
  • Once cooking is finished, stir in brown sugar & fish sauce.
  • Add more brown sugar or fish sauce if needed to adjust to your own taste.
  • Serve with steamed rice, naan bread & make sure you squeeze some fresh lime over it to finish off the flavour.

    Simply Divine. Modified recipe as follows: 1x 400ml of ea coconut cream & milk, added half cup beef stock, 2 cinnamon sticks, 3tbsp brown sugar, 2tbsp fish sauce. Made a cornflour slurry with 1tbsp each water & cornflourvto thicken. Cooked on low for 8hrs Delish!

    I liked this recipe because of its simple, tasty ingredients. The aroma while cooking was divine. I only had 1 can of coconut cream, so that’s what I used. I also used ground spices, again because that’s what I had on hand. I did use the Aldi Massaman paste as suggested. I think I might have cooked it for a bit too long (9.5 hrs), as the potatoes started to break down, so I wouldn’t cook for longer than the suggested time if I were to make this again.   3. My 1st Slowcookercentral attempt. Fairly tasty and I added an extra x 3 tblsps of Fish Sauce! I did use the Aldi brand paste & when it’s all gone I’ll try the Ayam brand. Very happy with the taste overall as I was serving it to visitors who hadn’t heard of it…… they enjoyed.
