Lunchbox Pizza Muffins

An easy yet awesome addition to any lunchbox. And as many variations as you can think up pizza toppings 🙂

Ingredients
 

  • English Muffins (split) x 4
  • Pizza Sauce x 4 tbslsp
  • Diced Ham x 80g
  • Grated Tasty Cheese x 1 cup
  • *Optional* Add any additional pizza topping you like or can think of! See notes below.

Instructions
 

  • Split each muffin in half and lay on a square of aluminium foil
  • Spread both halves of muffin with pizza sauce
  • Top with ham and cheese
  • Close muffin and wrap up in foil
  • Place in slow cooker and cook on HIGH for 45mins

Notes

  • I had my foil parcels directly on the bottom of my metallic slow cooker insert. If I was using a ceramic cooker I would elevate the parcels on a trivet etc and add 1cm of water to base of bowl, under the trivet but not reaching the muffins. However in the metal slow cookers this isn't necessary.
  • Your imagination is the only limit for these bad boys! Add any pizza topping you usually enjoy - pineapple, mushrooms, capsicum, chicken, onion, bacon, anything!
  • The beauty of these are that I had them cooking away for my children's and husbands lunchboxes while we were all seated enjoying our dinner. No fuss, no mess, and done by the time we were done 🙂 Too easy!
  • Also great for meals on the road, at the park, or at sports or other family outings!

  1. Why in a ceramic SC do you need the trivet and water? What’s the difference between the two? I’ve seen this sort of thing mentioned on other recipes.

    1. Some people worry that dry cooking in a ceramic bowl could crack it
      Personally I dry cook often and have NEVER ONCE cracked any of my bowls over the years I’ve slow cooked
      BUT … I give the option for those that worry as then the water means it is not cooking dry 🙂

  2. Can you load them up on top of each other in the foil to fit more than 4 in?,,And would you need to rotate them half way through cooking and extend cooking time if you did do more than 4?

  3. These were a winner today for my miss 2 ? we used woolies bread rolls. Great to have the option to use my slowcooker as I don’t have an oven

  4. I have been using 2 packs of muffins. Might be increasing to 3 as they are so popular.
    One pack with ham, the other pack with salami or kabana.
    Also use bbq sauce/tomato sauce. Half tomato other half bbq.
    Kids devour them for both breakfast and lunch.
    We live in S.E. QLD so they go straight into the fridge once cooked.
    I freeze them, if there are any left after a couple of days. I put paper towel in a large freezer safe container and lay them out in a single layer. I place paper towel in between the layers to catch any condensation.
    The teens take them out and defrost then warm them in the microwave for breakfast. If they take them for lunch, they just put them in their lunchbox and they defrost in time.

    Taste unreal, i did grill them for a cpl minutes each side to crust the bread on outside, but it is fantastic.
    Using this for miss 6 school lunches, will cut into quarters, thankyou ?
